Replacement for old Sealy Posturepedic bed

Hello
We have a Sealy divan bed which is older than I care to admit, but we would like a new bed and divan base.
It’s label reads: Sealy Posturepedic Ultra Luxe Crown Jewel Extra Firm with a Torsion 2000 sprung base.
I weigh 71kg and my wife weighs 57kg. I think we both tend to sleep on our sides.
We had a fruitless morning trying many mattresses in John Lewis. We tried mainly pocket-sprung mattresses, but none felt sufficiently “firm” to us. This included several Vispring and John Lewis mattresses at a wide range of prices that were labelled firm. One John Lewis own brand mattress, also pocket-sprung, felt like a brick and that isn’t what we’re looking for either! (We tried one Tempur mattress and we really didn’t like it)
I would describe our old mattress as feeling that we’re lying on top of it rather than sinking into it, but it doesn’t feel hard, it feels supported.
Are we looking for the impossible? Are we misjudging the firmness?
Would you be able to say which of your beds might be suitable for us?
We don’t have a fixed budget, but we will pay what it takes, within reasonable value, to buy a bed that we like.

The first thing to say is that we cannot provide a comparison to the Sealy product you have had previously, nor are we able to provide advice or suggestions in respect of the John Lewis products.

With your particular body weights I would suggest that you need a medium spring tension with a firmer feel in the upholstery. Please view the Artisan Bespoke, which can be ordered in a medium spring tension, but has a firmer feel in the upholstery (comfort layers).  One should not confuse feel with firmness of the spring unit. The tension of the spring needs to be determined by your body weight in order for it to provide the correct level of support, the comfort being provided by the upholstery layers. The Artisan Bespoke has the highest level of upholstery, which in this particular case will provide comfort with a degree of firmness, which I understand is your preference.

Under £500Will not get you much at best a 13.5 gauge open coil/cage sprung with a thin polyester layer or a solid foam mattress.
£500Entry level spunbond springs with some form of synthetic upholstery. Usually one sided mattresses.
£750The beginnings of a basic pocket springs unit with 800 – 1000 count. No substantial amount of filling other than foams and synthetic materials. Two sided models.
£1000Should get you away from most low ranges and into the mid-range pocket spring models.
