All of our Artisan mattresses except for the Artisan Bespoke 003 come in with a depth of between 11 and 12 inches. 
 
The Artisan 1500 and Tailored Pocket 2000 are both fully turnable mattresses. We'd always advise in the first year to flip the mattress over once a month and drop this to every 3-4 months in the second year onwards. This is to combat natural settlement as well as allow even distribution of all wear and tear. 
 

 
We would need to know your body weights, preferred feel in the top layers and sleeping habits in order to discuss suitability. 
 

 
Both of the models you are looking at give a slight sink into that top layer but not too much as they have a medium upholstery.
