The difference is in the amount of natural latex.

To most people the feel and touch is only slightly different in that the 100% natural latex feels ever so slightly softer.

Also the 100% natural latex is sometimes argued to have a slightly longer lifespan as its more pure.

That said 80% natural is usually way above the industry standard of 60% so when you’re getting to the percentages we supply in your already at the high end.
