Pocket srung matress

Hello.
I am after some good old honest advice.
We are looking to buy a new matress and we have decided that a pocket sprung matress is definietly the way to go.
We have aches and pains and we need a good nights sleep.
Should we go soft to medium?
We have a budget of around £1,000 for a King Size and would like natural organic fibres etc.
Any advice please to help guide us to make the right purchase would be very much appreciated.
