Vi Spring mattress is too soft, recommendation for our bedstead?

Hi - were looking to replace a king size 12 year old Vispring “traditional bedstead” mattress (JL special, and not made any more) that is too soft - it is medium springing, but felt soft from day 1. We also have the same mattress, except not a JL special version, on a double bed, and that feels much firmer and more supportive - there’s more difference than I think could be accounted for simply by the increase size between the double and the king. . Both beds are good quality sprung slat bedsteads.
I weigh 14.5 stone and 5’10”, my wife is 10 stone and 5’7” From researching your website, I assume we would want medium springing, but a firm feel - would we notice much difference between the Artisan Naturals and the artisan bespoke in firmness? Most of the medium mattresses we have tried in shops feel too “springy”. We sleep on our side / back - my wife sleeps well, I have back and neck aches and pains.
We also had a question on our bedstead - the central support bar is higher (by about an inch ) then each the side, so therefore the sprung slats are higher down the middle of the bed - is this ok for your mattresses ? I assume it may be designed like that to prevent a dip down the middle ?
