Ahh, the dreaded heat of memory foam. Unfortunately, some people really struggle with memory foam because it relies on heat to mould and soften. It's its blessing and its curse. You're going to struggle to completely remove the heat from a memory foam mattress but you can create a barrier between it and you.

I'd advise that a 100% natural latex topper would work best as its super breathable and responsive. A quality 100% natural latex topper will, however, be far more expensive than memory foam as it's a more expensive component. It beats memory foam hands down though as it has a far longer lifespan.

You could use a hybrid foam, though given they too retain some heat I'm not sure these would help dissipate the heat quickly enough compared to latex for you.
