Headboard dimensions and fabric

I am interested in one of your Artisan mattresses, super king, with a shallow sprung base on legs. We have very tall ceilings. Can we have the headboard height increased. Is there any option of supplying our own fabric. We would like something blue but don't see this option in your fabric choices.
