Best pocket sprung natural fibre £750-£1200

Looking to purchase a pocket sprung mattress to replace our 10 year old memory foam one.
My husband is a hot-blooded creature and is looking for something that will regulate his temperature and prevent over-heating. We have read that natural fibre pocket sprung is probably the best for this. I am a very cold lizard-like creature, though I would rather wrap up with extra layers than have a stifling mattress.
At 9 1/2 and 10 1/2 stone we're probably not wanting anything too firm. Tried a couple of Harrison Spinks ones at Dreams yesterday which seemed quite comfy at the 'medium' ranges, though really they're so different from our memory foam and a 2 minute test can hardly be that informative. Are there any quality similar mattresses that do the free trial periods? Have also read on here the comments about the shortened life-span of the pillow-tops so am taking that into consideration even though of the ones I tried yesterday they were comfiest.
I suffer from chronic pain issues, for the last few years with muscular tension and inflammation around my right shoulder, upper arm and neck. Not caused by the way I sleep (old swimming injury that won't settle) but certainly anything that helps would be most welcome and at the moment I'm finding I can be relatively comfortable during the day but having a restless night and waking up in a lot of pain. I sleep on my (left) side or stomach. Husband is back or side sleeper.
Have a flexible budget of around £750-£1500.

Anyone who suffers with heat issues should be looking at natural fibres as these provide the coolest sleep surface you can find. 
 
Pocket sprung mattresses are broken down into 2 elements; The spring tension and the upper layers. Spring tension is determined by body weight alone as this is what provides you the support. At your body weights we would match you both with a Medium spring tension. However, at 9.5st that person is borderline between a Soft and Medium so if they want a bit more give then choose the Soft. If they want a bit more support then choose the Medium. 
 
Once the spring tension is determined you can ignore that and then concentrate on the upper layers, also referred to as the comfort layers, and these can again be in soft, medium or firm. 
 
You being a front sleeper should avoid anything too soft in the top layers so as not to cause an unnatural arch in your spine and potentially cause yourself pain.
 
Your husband being a side sleeper needs to avoid anything too firm in the top layers as that will cause pressure point pains in places such as shoulders, hips and knees. 
 
As such I'd advise to go for something more medium in the top layers. Our Artisan Naturals and Bespoke 004 are true mediums giving that slight sink but not too much. The only difference between these 2 models is that the Naturals has 85% natural fillings whereas the Bespoke 004 has a full 100% natural fillings.

Our Artisan Naturals and Bespoke 004 compare with the Vi-Spring Regal Superb that you can find in stores such as Furniture Village, House of Fraser, Harrods or And So To Bed. The base the mattress is going on top of can make a difference. A sprung base will always give the mattress a slightly softer feel whereas a solid platform or slatted base will give the mattress a slightly firmer feel. If you yourself have a slatted bed base and are able to test those comparison models then just ask the showroom to place the mattress on to the floor to emulate the feel of that base.
