Looking at replacing my worn out Silentnight mattress.

Hi, I'll try to be detailed, whilst brief as possible.
Firstly, if I can be nosey: Who do you use to manufacture your mattresses?
I've been looking at Millbrook and Hypnos mattresses but I'm still a bit confused as to what I want / need and what's a good deal, what isn't etc.
I'm 14st and wanting to lose around a stone more so need to bare that in mind. I ALWAYS sleep on my side so I was thinking that a medium tension would be about right. I've recently become Pescetarian / Pesco-vegetarian, so a mattress with NO animal sourced materials would be preferable.
I think pocket springs would be best for me. I don't want sweaty memory foam as I would find it too hot in summer. A latex top layer would be ideal. Does such a thing exist? I'm looking to spend around £400-500 for a quality mattress to last me hopefully a good 8 years. I'm very much interested in the Origin comfort and Origin reflex mattresses, but the short (2 year) warranty is putting me off. Other similarly priced alternatives are offering 10 years. Is this a gimmick? Would be interested to know.
I should also point out that I plan to line the slatted base on my bed with peg board or MDF.
So that about sums it up. Any information, advise, reassurance would be great.
